Pulled Pork with Root Beer Sauce

1 2 1/2 - 3-pound pork sirloin roast
1/2 tsp salt
1/2 tsp. black pepper
1 TBS cooking oil
2 medium onions, cut into thin wedges
1 cup root beer*
2 Tbs minced garlic
3 cups root beer*
1 cup bottled chili sauce
1/4 tsp root beer concentrate (optional)
Several dashes bottled hot pepper sauce (optional)
8-10 hamburger buns, split (toasted if desired)

*Do not use diet root beer

1. Trim fat from meat. Sprinkle meat with salt and pepper. In a large skillet brown meat on all sides in hot oil. Transfer meat to 3 1/2 - 5 quart slow cooker. Add onions, the 1 cup root beer, and garlic. Cover and cook on low-heat setting for 8-10 hrs or high-heat setting for 4-5 hrs.

2. About 30 minutes before roast is done, for sauce, in a medium saucepan combine the 3 cups root beer and the chili sauce. Bring to boiling; reduce heat. Boil gently, uncovered, stirring occasionally, about 30 minutes or until mixture is reduced to 2 cups. If desired, add root beer concentrate and hot pepper sauce.

3. Transfer meat to a cutting board or serving platter. Using 2 forks, pull meat apart into shreds. If desired, use slotted spoon to remove onions from cooker to serve on top of the meat. If desired, line buns with lettuce leaves and tomato slices. Add meat and spoon on sauce.

I made this for my family last night and we all loved it, including the kids. The sauce is not too strong, and doesn't taste like root beer at all. (I didn't use the optional ingredients) This was really easy, as well. Just throw it in the crock pot early in the day and dinner is ready to go!

Chicken Tortilla Soup (in the crock pot)!

Yum, yum and perfect for a cold, winter's day!

1 can black beans
1 can corn
1 can diced tomatoes (southwest style, if possible)
1 packet enchilada sauce mix (or if you can't find this, mild taco seasoning works well too)
1 1/2 C water
1 can tomato sauce
1 can cream of chicken soup
2 C milk
3-4 boneless chicken breasts

In crock pot, mix the enchilada packet together with the water and tomato sauce. Add cream of chicken soup and milk and wisk together until smooth. Add chicken. Pour drained black beans, drained corn and diced tomatoes on top of that.
Cook on low 6-8 hours.
Before serving, take out chicken and shred or dice, then put back and stir it all together.
Serve with sour cream, shredded cheddar cheese, lime, avocado, or tortilla chips. (Use any or all of these - I think it's the best with everything!).

Crockpot Breakfast Casserole

Funny you should ask, Shally, because I've been meaning to post this recipe, but wasn't sure if anyone would be interested... We blessed our baby last week and our church got out early, so I made this for the after-church gathering at our house, and it turned out YUMMY - I got many, many compliments. ( I doubled the recipe, and it fed 12 or 15 or so...) And, the best thing is, you can make it at night, start cooking it when you go to bed, and it's ready when you wake up! Anyway, to the recipe....

Ingredients:
32 oz bag Southern Style hash browns (these are the little square kind - not the shredded ones)
1 lb bacon, fried, drained and torn or cut into pieces
1/2 C diced onion
3/4 lb cheddar cheese, diced
1 dozen eggs
1 C milk
1/2 tsp dry mustard
salt and pepper, to taste

Directions:
Layer frozen potatoes, bacon, onion and cheese in 2-3 layers. Finish with cheese.
Beat eggs, milk, mustard, salt and pepper. Pour on top.
Cook on low for 10-12 hours.

Yummy with salsa, Cholula, green Tabasco, or of course, good old ketchup!

Yummy Pulled Pork (Crock Pot)

This is so easy it's ridiculous, and sooo good too!

2 or so pounds of Pork Loin
1 16 oz bottle of KC Masterpiece Spiced Caribbean Jerk Marinade

Put the Pork Loin and Marinade in the crock pot and cook on high for 6 hours or low for 8 hours. When it's about done, get two forks and shred the pork, stir it all up with the sauce and let it sit for a little bit more.

This is really good over sticky rice, or in Kaiser-type rolls for sandwiches! Enjoy!

Steak and Tomatoes

This is one of those great meals with freezer and pantry ingredients. It's so comforting and good.

1 tenderized (cube) steak for each person
about 3 cans stewed tomatoes

Add one can of stewed tomatoes to the crockpot. Sear the meat in a frying pan (season with salt and pepper), layer over tomatoes in crockpot. Deglaze pan with another can of tomatoes, and add to pot. Depending on how much meat you have in the pot, add one more can of tomatoes for every 2 people. (I like lots of tomatoes and juice to pour over the rice) Cook 8 hours. (The tomatoes get sweet and savory as they cook long and slow. Serve over rice.

Chili

I posted these on my blog a while ago and i wanted to put them on here to for everyone else, they are very easy.. and that is how i like it!!!

1 lb. Jimmy Dean Maple Sausage
4 reg. size cans red kidney beans, drained
1/2 to 1 whole onion chopped
1 pkg. chili mix
1 jar any kind of salsa
1/2 cup or so sugar

Cook Sausage into bite size pieces. Then combine all ingredients into crock pot and cook 3-4 hours on low.
*The maple sausage can be found by the breakfast bacon at the grocery store, or you can replace it with ground hamburger or ground turkey, i really don't like sausage all that much- but the maple sausage is sooo good... we make tacos with it too.*
*Also, sometimes i will make a little extra chili and then use it as the meat base for Navajo tacos, a couple days later. For those i just buy a big bag of Rhodes rolls and flatten them out and then fry it. Maybe not too healthy, but it tastes really good! I love them with honey butter too!!!*
