I don't usually get excited about carrot cake, but my mother in law makes this and it's my favorite cake, really. She makes it in a jelly roll pan (a cookie sheet with sides).
2 cups sugar
4 eggs
1 cup oil
2 cups flour
1 tsp cinnamon
2 tsp soda
3 cups grated carrots (she grinds them in the blender by filling up the blender with wather, adding the carrots, blending, then draining the carrots. If you do it this way, add 1/4 cup more flour.)
1 cup chopped walnuts
1 tsp salt
1 tsp vanilla
Bake at 350 for 35-40 min. (In a jelly roll pan)
Frosting:
1lb. powdered sugar
1 3-1/2 oz. pkg cream cheese, softened
1 stick butter
2 tsp vanilla

Banana Cake
I have had a few emails since Christin posted about my Banana Cake recipe-- so here it is!
This is another family fave. Every time I make it I wonder why I don't make it more. I might have to make some today now!!
Ingredients:
1 yellow cake mix
1/3 cup oil
1 1/2 tsp. baking soda
1 cup butter milk
3 ripe bananas- mashed (this is a great time to use those mushy bananas you want to throw away!)
3 eggs
Frosting
1 stick butter
1 pound powdered sugar
1 tsp vanilla
add whipping cream until fluffy
Bake @325 for 30 minutes. Let cool, then top with frosting. Eat as much as you can right away, because as soon as anyone else gets to it, it will be gone. Ask Christin. :)
